Northeastern Dried Shrimp Rice
Traditional dish from the sertão: aromatic rice with salted dried shrimp, coriander and chili peppers. Rustic and striking.

- 2 cups white rice
- 1 small onion, chopped
- 3 chopped garlic cloves
- 2 chopped seedless tomatoes
- 1 chopped chili pepper (optional)
- 4 cups hot water
- Chopped coriander
- Olive oil and black pepper

Soak the dried shrimp in warm water for 10 minutes to remove excess salt. Drain.

In a pan, sauté the onion and garlic in the olive oil until golden. Add the tomatoes and chili peppers and cook for 3 minutes.

Add the drained dried shrimp and sauté for 2 minutes.

Add the rice and stir for 1 minute to combine.

Pour in the hot water, taste for salt (you may not need it). Cover and cook over a low heat for 18 minutes, until the rice is dry.

Turn off and rest for 5 minutes, covered. Fluff with a fork, garnish with coriander and serve.
